Great podcast Gavin, and many thanks to Sue who seems to be a domestic do-it-yourselfer after my own heart.
Just to let you know that I grew up with Wensledale cheese (coming from just north of the Dales) but got my recipe from the Australian book "Home Cheesemaking" by the Wilmans where it's listed as 'white wensleydale'.
